Green capsicum is harvested unripe, lower in natural sugar, and holds its colour through a standard drying cycle without much fuss. Red capsicum is the fully ripened fruit, higher in sugar, and needs a slightly more controlled temperature so the sugars don’t caramelise and dull the colour before the moisture is fully out. We run the two colours as separate batches through the driers rather than mixing them through the same cycle.
