Dehydrated Potato Flakes, Cubes and Powder
Potato is the one item on this list that doesn’t dry the same way as the rest of our vegetable range. Cubes and powder go through the standard route — wash, peel, cut, hot-air dry — but flakes are made differently: the potato is cooked and mashed first, then the mash is drum-dried into thin sheets and broken into flakes. That’s a cooking process as much as a drying one, which is also why flake colour (white) and cube colour (pale yellow) sit differently on the same spec sheet even though both start from the same raw potato.
Cubes, Flakes and Powder
Cubes are cut to 10-15mm and go through simple hot-air drying — no standard flake size is fixed for this form beyond that. Flakes come off the drum-drying line and rehydrate almost instantly into a smooth mash texture, which is what instant mash, extruded snack and health-food producers are buying it for.
