Fresh green bell pepper runs close to 92% water, with thin walls and a seed cavity that has to be fully cleared before drying — leftover seeds or pith show up as visible defects in the finished flake, so deseeding is a manual inspection step, not just a wash-and-cut process the way it is for a root vegetable.
Why 10x10mm and Not Smaller
Capsicum flesh is thin enough that cutting it down to onion- or garlic-scale flakes (3-5mm) would mean most pieces scorch or curl before the centre finishes drying.
