A denser root vegetable reduces down at a relatively efficient ratio; bottle gourd needs a proportionally larger volume of fresh input to reach the same finished weight, and that low starting density is also why the flesh needs a longer, gentler drying curve than a denser vegetable to avoid scorching the outer surface before the core moisture is fully out.
