Dehydrated Green Capsicum Flakes

Capsicum is one of the few vegetables in our line where the raw material itself is mostly water and hollow structure rather than dense flesh, and that shapes almost every processing decision downstream. Fresh green bell pepper runs close to 92% water, with thin walls and a seed cavity that has to be fully cleared before drying — leftover seeds or pith show up as visible defects in the finished flake, so deseeding is a manual inspection step, not just a wash-and-cut process the way it is for a root vegetable.

Why 10x10mm and Not Smaller

Capsicum flesh is thin enough that cutting it down to onion- or garlic-scale flakes (3-5mm) would mean most pieces scorch or curl before the centre finishes drying. The 10x10mm cut gives enough mass per piece to dry evenly without overcooking the edges, which is also why capsicum doesn’t come in a powder or granule grade in our line the way root vegetables do — the flesh-to-surface ratio doesn’t support grinding down without losing the piece’s structure and colour.

Manufacturing Process

Farm-fresh green capsicum is inspected and graded on arrival, then washed and deseeded to clear stems, pith and seeds, and sliced to 10x10mm before controlled hot-air dehydration at a temperature low enough to avoid degrading the chlorophyll that gives the flake its green colour — overheated capsicum drifts toward a dull olive rather than staying bright green. The dried flakes are sieved, colour-sorted, passed through metal detection, and packed the same day.

Green capsicum flakes are a standard input in masala and spice blend manufacturing, instant soup and gravy bases, and pickle and seasoning production. Restaurants and HoReCa kitchens buy it for quick-rehydrating garnish, and it shows up in Ayurvedic formulations alongside its food-industry use.
