Garlic’s pungency isn’t sitting in the clove waiting to be dried out — it’s created the moment the cell walls are cut, when an enzyme called alliinase converts an odourless compound into allicin, the thing that actually smells and tastes like garlic. That reaction happens fastest in the first few minutes after slicing, which is why the flakes are cut to 3-5mm and moved into hot-air drying immediately rather than being held or batched — the timing between the knife and the drier has a real, measurable effect on how pungent the finished flake tastes, more so than for a vegetable where flavour is simply “locked in” by drying rather than generated by cutting.

Why 3-5mm

At 3-5mm, a flake is small enough to rehydrate within a normal cook time but large enough to still register as a visible piece — which matters for buyers who want garlic to read as garlic in a finished product rather than disappear into a base the way powder does.
