Dehydrated Red Onion Powder

Grinding is where a red onion batch either holds its colour or doesn’t. Milling ruptures far more cell surface than slicing does, which exposes the onion’s anthocyanin pigment and sulfur compounds to air across the whole batch at once — so powder is milled last, right before packing, rather than ground ahead of time and held as loose powder in storage.
