Dehydrated Red Capsicum Flakes
Red capsicum’s colour comes from capsanthin, a pigment that’s more heat-sensitive than the chlorophyll or anthocyanins in most of what else we process — push the drying temperature too high and the flake comes out a dull brownish-red instead of the vivid red the specification calls for. That sensitivity is also why deseeding matters more here than on most other vegetables we dry: any seed or stem fragment left in the batch dries to a different colour than the flesh and shows up as a visible defect in a flake that’s meant to be uniformly red.
Cut and Grade
Flakes are cut to a fixed 10x10mm — larger than the 3-5mm flake size typical of onion or tomato, because capsicum flesh is thicker and a smaller cut would shatter into fines during drying rather than holding together as a flake. After drying, flakes are colour-sorted as well as sieved, since colour consistency is graded separately from particle size on this line. If your formulation calls for the other colour, we also supply green capsicum flakes, which run a different process since green capsicum doesn’t carry the same pigment-degradation risk.
Processing
Farm-fresh red capsicum is inspected and graded on arrival, then washed and deseeded by hand to remove stems and seed cores before slicing to size. Hot-air drying runs at a lower, more tightly controlled temperature than most of our other lines specifically to protect the capsanthin content, then flakes are sieved, colour-sorted, metal-detected and packed in moisture-proof bags.
