Dehydrated Red Onion Flakes

Red onion’s colour comes from anthocyanins, the same class of pigment that gives red cabbage and purple grapes their colour — and like those, it shifts with heat and pH rather than staying fixed. That’s why the finished flake can run anywhere from deep red to reddish-purple within spec: the exact shade depends on the raw bulb’s pigment concentration going in as much as on the drying itself. Buyers grading strictly on colour uniformity should expect and plan for that natural range rather than treating it as a defect.

Why Flakes, Specifically

At 3-5mm, the flake keeps enough of the onion’s cell structure intact that its sharp, pungent character holds up better through storage than a powder milled from the same batch — less cut surface means less of the sulfur compounds that carry red onion’s flavour are exposed to air and lost before the product reaches your line. Processing
