Its colour comes from chlorophyll, which breaks down fast under heat — push the drying temperature the way you would for a root vegetable and the batch comes out olive-brown instead of the pale-to-mid green the specification calls for. That’s why parsley runs on a slower, lower-temperature cycle than most of our other lines; the trade-off is a longer drying time in exchange for a leaf that still reads as fresh parsley on sight.
